Pancit Canton with Chinese Sausage and Olive Oil

This is one breakfast and dinner dish I prepared recently. This is my own version of a pancit canton recipe which I have cooked and concocted in countless ways based on what ingredients are available at the time of cooking. I used chinese sausage as flavor enhancer since I didn't have anything in the fridge; no chicken, no pork, no seafood. It turned out okey, according to my partner. He normally eats a hearty breakfast. For awhile back, during younger days,  his breakfast was a cup of black coffee. That's it. Over the years, I convinced him that breakfast was the most important meal of the day. It doesn't matter if you just eat  fruits for lunch. But it is a MUST to eat a nutritious breakfast. My version of pancit canton was complete in terms of balance. Yes I am Sour Grape-ing

My friend who recently came down from California, believe it or not gifted me with grapes harvested from her own family's Napa Valley grape plantation and wineries. Yes, she married into a family who's been into wine making for the longest time . Swell. And the green seedless grapes were delivered in a large balikbayan box, delivered door-to-door in time for her arrival. And so, af ter disbursing some to my mom's and brothers' I asked myself, what shall I do with these luscious looking fruits? Good thinking. There's more than enough to prepare a green grape salad concoction such as this: 1 kilo seedless grapes, washed very well, peeled, refrigerated in a separate glass bowl 1 cup grated queso de bola 1 cup grated ordinary cheddar 1 cup lemon juice 1 cup mascu vado sugar 2 cups sour cream Mix everything in a large glass mixing bowl. No measurements but a great fruit salad recipe

This fruit salad recipe is as old as my children. It's their father's. Mind you, I'd like to give the exact measurements but that would be a sin as far as he is concerned because that is a biiiig secret. This fruit salad requires : buko (young coconut meat grated) , nata de coco , kaong (sweet sugar palm), fruit cocktail, canned lychees, cream, condensed milk, and kalamansi (calamondin) juice. After everything is mixed, the salad needs to be frozen. Taaaaste terrific.
